It’s the height of the summer and you are ready for the beach. That usually means and entire day of hanging out under the sun and soaking up those rays. Here are a few of our teams favorite healthy beach goodies.
Not just delicious to munch on in the heat, but also a great way to keep the rest of your sunbathing cooler at its coldest.
Grapes are considered a super food since they are packed with special nutrients that can help maintain your overall health.
Grapes have been known to reduce the risks of obesity, cancer fighting properties from antioxidants, heart disease, high blood pressure and even diabetes.
Black Bean Salsa
This recipe is perfect for keeping you full on the beach, as the high heat and the swimming will help increase your metabolism, but you want to make sure youre not just consuming empty calories. Here’s our favorite simple recipe:
- 1 can black beans, low sodium
- 6 tbsp cilantro, fresh
- ½ cup Green bell pepper
- 1 lime, large
- ½ cup Red Bell Pepper
- ½ cup Red Onion
- 1 can sweet whole corn
- salt and pepper to taste
- Chop veggies and toss together
You can get creative with your modes of delivery into your tastebuds, we love the traditional tortilla chips.
Chic Pea “Chicken” salad
A delicious Chicken Salad on fresh Celery stalks or crackers is always a delicious treat in the summer. Lower the fat and enjoy at any temperature with this delicious recipe.
Large can of Chickpeas
Red Grapes (the bigger ones are better)
Just Mayo (Hampton Creek brand) to taste
Mustard to taste
Vinegar to taste
Vegetable (or chicken) broth
Vegan chicken bouillon (or chicken bouillon)
1. Drain and rinse chickpeas
2. Fill pot with broth and one cube of bullion and heat to low heat
3. Add chickpeas to broth and let heat for 10 minutes
4. Cut celery and grapes (however many you prefer)
5. Put chickpeas, celery and grapes into a bowl
5. Add a heaping spoonful of Just Mayo, make a spiral of mustard on the top of the ingredients and a small capful of white vinegar.
6. Mix and adjust to taste!
Serve with crackers, on bread, or just eat it by itself!
Note: You can add as much mayo and mustard as you want. This is a taste preference.
Chopped or Balled Frozen Watermelon
As you can see, we love fruit! Watermelon is a great low calorie snack that can keep you cool, fill your belly, and keep your cravings in check.
