The cinnamon bun pancake of your dreams!


I woke up this past Sunday morning absolutely craving a big ‘ol cinnamon bun.

You know, the one you get at the mall, that you eat around the edges, making your way through the little swirly path, savoring each cinnamon glazed bite until you get to the best part…

the center of the cinnamon bun.

It’s warm, it has 10x the amount of cinnamon filling then the rest of the bun and it just warms the soul!

Am I right?!

but, Sunday morning, I figured a trip to the mall just wasn’t what i was feeling, SO…

I put my Betty Crocker creativity hat on and got to work!

Cinnamon Bun Pancake style, of course.

Because who doesn’t love pancakes?

Cinnamon Bun Pancakes

Paleo, Gluten-Free Cinnamon Bun Pancakes


Pancake Batter
1/4 Cup pancake mix (preferably a healthy option)
(or you can simply use a combination of 1/8 cup almond and 1/8 cup coconut flour)
1 Scoop vanilla GenOne Vegan-ISO Protein (use code TAYLOR for 10% off)
2 tbsp Egg Whites
2 tbsp Almond Milk

Cinnamon Swirl/Filling
2 tsp Organic Light Brown Sugar
1 tbsp Cinnamon
1/2 tbsp Extra Virgin Coconut Oil

1/2 Scoop Vanilla Genone Vegan-ISO Protein
1/8 cup Almond Milk


1:  In a mixing bowl combine pancake mix and protein powder, then slowly add in your egg whites and almond milk, continue to stir until all clumps are gone, using a hand blender is the best option.

2: Set batter aside and let sit while you prepare your cinnamon swirl filling. In a small microwave safe bowl, melt your coconut oil then stir in the brown sugar and cinnamon.  continuing to stir until brown sugar is fully dissolved.

3: Over medium heat, spray a large pan then pour all of batter creating your pancake shape you desire.  You can turn this into 2 pancakes, but I decided to go with 1 giant pancake!

4: Once bubbles start to appear, slowly pour your cinnamon swirl filling throughout your pancake, making sure not to get too close to the edges so it doesn’t bleed out.

5: Let sit for about 30 seconds then carefully flip pancake over.

6:  To create your icing, in a bowl combine your protein powder and almond milk and heat in microwave for 15 seconds just to warm it up a bit.


Once pancake is fully cooked, take a peek under it after you flipped to double check. Then pour your icing over your giant cinnamon bun pancake and enjoy!!!

I’m thinking next time i might caramelize some raisins and put on top?! or even in the cinnamon swirl filling itself?! Yes please!
