This year don’t use the excuse of the holidays to fall off track with your diet. There are PLENTY of tasty and healthy options you can choose that will still get you in the spirit!

You and your loved ones will look forward to this recipe every year, and best of all this hash can upgrade any breakfast and comes together in one. single. pan. Yes, even the bacon! With this versatile hash you won’t have any problem figuring out what dish to make this year!

INGREDIENTS
large sweet potatoes, peeled and chopped
bell peppers, chopped
large onion, chopped
cloves garlic, minced
3 tbsp. extra-virgin olive oil

Kosher salt
Freshly ground black pepper
1/4 tsp. paprika
3 sprigs rosemary
6 slices bacon, chopped
Freshly chopped chives, for garnish

DIRECTIONS

  1. Preheat oven to 425°. On a large rimmed baking sheet, toss sweet potatoes with bell peppers, onion, garlic, and oil. Season with salt, pepper, and paprika. Scatter rosemary and bacon on top.
  2. Bake until sweet potatoes are crispy on the outside and soft on the inside, about 45 minutes, shaking the pan halfway through.
  3. Garnish with chives to serve.
